Description

Location and access

Located in Building D on the campus of Melbourne Polytechnic’s Preston campus the 115m2 space is bookable seven days a week from 8am – 9pm.

The kitchen has been established to be compliant to Class 2 food production level. Each business using the space must show full food safety compliance and insurance accreditation to be allowed a kitchen booking. Specialist trays, pots, pans, knives, utensils and specialist small appliances will need to be provided by users.

Specifications

Registered users will have access via a swipe card to the kitchen, storage areas and cleaning rooms. Dedicated parking adjacent to the FoodINC kitchen has been secured for users.

  • Cooking equipment includes 2 Rational combi ovens, 1 Turbofan Bakery oven and prover, Cleveland 25l jacketed gas kettle, 1 Waldorf deep fryer and 6 Waldorf gas ovens
  • Specialist equipment includes: 1 Polar blast chiller, 1 Williams single door freezer, 20l and 40l planetary mixers, 1 vacuum sealer
  • Wash down equipment includes an Eswood commercial dishwasher and numerous large wash and prep benches. Cleaning products are supplied
